Orata with Saffron and Orange

Ingredients (serves 4)
Threads of saffron 0,3 g
Orata fillets 4
Orange 1
Shallot 1
EVO oil
Salt
White pepper
Herbs
Preparation
Squeeze the orange.
Finely chop the shallot and heat a little oil in a frying pan. Add the shallot and cook over medium heat until it is translucent. Put the escalopes in and brown them on each side.
Add half of the orange juice and the saffron, then keep on cooking pouring the remaining juice in little by little.
Serve them warm and garnished with a sprinkle of pepper, orange zest and herbs.
